Description

This comforting and nourishing soup is the perfect weeknight remedy for busy schedules. Featuring savory ground turkey Italian sausage, tender cheese-filled tortellini, and fresh spinach in a velvety cream cheese-enriched broth, this one-pot wonder delivers satisfying Italian-inspired flavors without the stress of complicated cooking. It is a hearty, wholesome meal that feels indulgent yet is easily prepared in your slow cooker.

Ingredients

1 lb ground Italian turkey sausage (browned and drained)
1 (15 oz) can Italian-style diced tomatoes (undrained)
4 cups chicken bone broth
8 oz cream cheese (cubed and softened)
1 (20 oz) bag frozen cheese tortellini
3 cups fresh baby spinach
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and pepper to taste

Instructions

In a skillet over medium-high heat, brown the ground turkey sausage until fully cooked; drain excess fat and set aside.
Place the browned sausage, diced tomatoes with juices, chicken bone broth, Italian seasoning, and garlic powder into the slow cooker.
Cover and cook on low for 4 hours or high for 2 hours.
Stir in the cubed cream cheese until melted and smooth.
Add the frozen tortellini and cook for an additional 20-30 minutes until pasta is tender.
Stir in the fresh spinach just before serving until wilted.
Season with additional salt and pepper as needed and serve hot.

Notes

Ensure the cream cheese is softened or at room temperature to help it blend seamlessly into the broth. You can substitute the chicken bone broth with vegetable broth to suit preference. Store leftovers in an airtight container for up to 3 days, though the pasta may soften further upon reheating.
