Ingredients

2 large chicken breasts, skinless and boneless
2 large carrots, peeled and sliced into rounds
2 celery ribs, sliced
1 medium yellow onion, diced
4 garlic cloves, minced
2 large bay leaves
6 cups chicken bone broth
1 cup egg noodles
1 teaspoon dried thyme
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

Place the onions, carrots, celery, and garlic at the bottom of the crockpot.
Season the chicken breasts with salt, pepper, and dried thyme, then place them on top of the vegetables.
Add the bay leaves and pour the chicken broth over the ingredients.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
Remove the chicken breasts, shred them with two forks, and return the meat to the slow cooker.
Stir in the egg noodles and cook on high for an additional 15 to 20 minutes until the noodles are tender.
Remove bay leaves and serve hot, garnished with fresh parsley.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. If noodles absorb too much broth, add a splash of warm broth when reheating. You can substitute egg noodles with gluten-free pasta or rice if preferred.
