Ingredients
1 ½ lbs boneless, skinless chicken breasts
¼ cup lime juice (fresh or non-alcoholic)
¼ cup honey
2 tbsp soy sauce (alcohol-free)
1 tbsp olive oil
2 cloves garlic (minced)
1 tsp lime zest
1 ripe mango (diced)
¼ red onion (finely chopped)
1 tbsp cilantro (chopped)
½ jalapeño (seeded and minced)
1 tbsp lime juice (for salsa)
½ tsp sea salt
¼ tsp black pepper
Instructions
Whisk lime juice, honey, soy sauce, olive oil, garlic, and lime zest in a bowl
Marinate chicken for at least 30 minutes
Heat skillet or grill to medium-high heat
Cook chicken 6-7 minutes per side until golden and cooked through
Meanwhile, combine mango, red onion, cilantro, jalapeño, lime juice, salt, and pepper in a bowl
Let salsa chill while chicken rests
Serve chicken topped with salsa and extra cilantro
