1 tsp dried oregano
1 tsp red pepper flakes
4 cups chicken stock
2 cups cooked rotisserie chicken, shredded

Fresh basil for garnish
Instructions
Cook ditalini pasta in boiling salted water according to package directions, drain, and set aside.
Heat sun-dried tomato oil in a large pot over medium heat.
Sauté the onion, carrots, and celery until softened, about 5-7 minutes.
Stir in garlic, oregano, and red pepper flakes, cooking until fragrant.
Pour in chicken stock and bring to a gentle simmer.
Add the shredded chicken and chopped sun-dried tomatoes; simmer for 10 minutes.
Stir in the heavy cream and parmesan cheese until fully incorporated and smooth.
Add the cooked pasta to the soup and stir to combine.
Season with salt and pepper to taste, serve warm garnished with fresh basil.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Pasta may absorb liquid over time, so you may need to add a splash of stock when reheating. For a gluten-free twist, substitute ditalini with a gluten-free macaroni or rice-based pasta.
