Ingredients
2 lbs boneless, skinless chicken thighs
1/2 cup soy sauce (low sodium optional)
1/4 cup honey
1/4 cup brown sugar
2 cloves garlic, minced
1 tbsp grated fresh ginger
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp cornstarch (optional, for glazing)
1/4 cup water
Instructions
Combine soy sauce, honey, brown sugar, garlic, ginger, rice vinegar, sesame oil, cornstarch, and water in a small bowl
Place chicken thighs in a 6-quart slow cooker
Pour sauce over the chicken
Cover and cook on LOW 6-8 hours
Shred chicken with a fork
Simmer sauce on stovetop 10-15 minutes if thicker glaze is desired
Notes
Use chicken breasts (increase cook time slightly if thicker)
