Description

A simple, nutritious pasta dish combining sweet cherry tomatoes, fresh spinach, garlic, and olive oil. Quick to prepare and perfect for busy weeknights, this Italian-inspired recipe offers a harmonious blend of flavors and colors in every bite.


Ingredients

8 oz (225g) pasta (spaghetti or penne)
2 cups cherry tomatoes, halved
4 cups fresh spinach
3 cloves garlic, minced
2 tbsp olive oil
1 tsp red pepper flakes (optional)
salt to taste
fresh basil for garnish
1/2 cup grated Parmesan cheese (optional, or nutritional yeast for vegan option)


Instructions

Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente
While pasta cooks, heat olive oil in a large skillet over medium heat. Sauté garlic for 1-2 minutes until fragrant
Add halved cherry tomatoes to the skillet and cook for 5-7 minutes, mashing them slightly and stirring until softened
Stir in spinach, red pepper flakes, and a pinch of salt. Cook until spinach wilts, about 3-4 minutes
Drain pasta and add to the skillet. Toss to coat in the sauce
If using, sprinkle with Parmesan cheese or nutritional yeast before serving. Garnish with fresh basil


Notes

Use heirloom cherry tomatoes for a sweeter flavor
Fresher spinach yields better texture and nutrition
