Description

The Fall Harvest Salad Supreme is the ultimate seasonal bowl, bringing together the warmth of oven-roasted delicata squash and Brussels sprouts with the crisp, refreshing crunch of orchard-fresh apples. Finished with tender roasted chicken and a tangy dressing, this vibrant dish captures the essence of autumn. It is a hearty, nutrient-dense meal perfect for a nourishing lunch or a beautiful centerpiece for a fall gathering, offering a perfect balance of savory comfort and energizing, seasonal ingredients.


Ingredients

1 delicata squash, halved, seeded, and sliced into 1-inch pieces
1 lb Brussels sprouts, trimmed and halved
3 tablespoons olive oil, divided
4 tablespoons Salad Supreme seasoning, divided
2 boneless, skinless chicken breasts
1 head green leaf lettuce, sliced into 1-inch strips
1 bunch lacinato kale, ribs removed and sliced into 1-inch pieces
1 red apple, cored and diced


Instructions

Preheat your oven to 400°F (200°C).
Toss the delicata squash and Brussels sprouts with 2 tablespoons of olive oil and 2 tablespoons of Salad Supreme seasoning on a baking sheet.
Rub the chicken breasts with the remaining tablespoon of olive oil and 2 tablespoons of Salad Supreme seasoning.
Place the chicken on the same baking sheet or a separate one, and roast everything for 20-25 minutes until the vegetables are tender and caramelized and the chicken is cooked through.
Remove from the oven and let the chicken rest for 5 minutes before slicing it into bite-sized pieces.
In a large bowl, combine the green leaf lettuce and kale.
Top the greens with the roasted vegetables, sliced chicken, and diced fresh apples.
Toss gently to combine and serve immediately.


Notes

You can prepare the chicken and roasted vegetables in advance and store them in the refrigerator for up to 3 days to make assembly faster. If you prefer, add toasted walnuts or pecans for extra crunch and healthy fats. Ensure you use an alcohol-free dressing, such as a simple apple cider vinegar and honey vinaigrette.
