Description

Ingredients

8 ounces dried pasta noodles (spaghetti, linguine, or fettuccine)
4 tablespoons unsalted butter, divided
2 cloves garlic, minced
2 tablespoons all-purpose flour
Salt to taste
Grated Parmesan cheese (optional, to taste)


Instructions

Bring a large pot of salted water to a boil.
Cook pasta according to package instructions until al dente; drain and set aside.
In a large skillet, melt 3 tablespoons of butter over medium heat.
Add minced garlic and sauté for 1 minute until fragrant but not browned.
Sprinkle in flour to form a roux; cook for 1 minute, stirring constantly.
Gradually whisk in 1/4 cup of the pasta cooking water into the skillet.
Reduce heat and stir until the sauce thickens and coats the noodles.
Add cooked pasta to the skillet and toss to coat evenly with the garlic butter sauce.
Optional: Sprinkle grated Parmesan cheese over the warm noodles.
Season with salt to taste and mix until well combined.


Notes

For a creamier result, stir in 1 tablespoon of non-dairy milk or broth.
Fresh parsley or chives make a nice finishing touch.
Store in the refrigerator for up to 3 days in an airtight container.
