Description

Tender grilled chicken pieces tossed in a rich garlic Parmesan butter sauce with a hint of lemon and parsley. A quick, flavorful dish perfect for weeknight dinners or backyard grilling.


Ingredients

  • 4 tablespoons butter
  • 3 tablespoons grated Parmigiano Reggiano (Parmesan cheese)
  • 4 cloves garlic, chopped
  • 1 pinch red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 teaspoon Cajun seasoning
  • Extra chopped parsley for garnish (optional)


Instructions

1. Preheat the grill to medium-high heat.

2. In a small saucepan, melt the butter over medium heat.

3. Add the chopped garlic and sauté until fragrant, about 1 minute.

4. Stir in the grated Parmesan cheese, red pepper flakes if using, lemon juice, and chopped parsley.

5. Cook the sauce while stirring frequently until the cheese melts and the sauce becomes smooth.

6. Remove the sauce from heat and set aside.

7. In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated.

8. Thread the seasoned chicken pieces onto skewers.

9. Place the skewers on the grill and cook for 5–7 minutes per side until the chicken reaches an internal temperature of 165°F (74°C).

10. Remove the chicken from the grill and discard the skewers.

11. Transfer the grilled chicken to a bowl and pour the garlic Parmesan sauce over the top.

12. Toss until the chicken is evenly coated in the sauce.

13. Serve immediately and garnish with additional chopped parsley if desired.


Notes

Increase the red pepper flakes if you prefer a spicier garlic Parmesan sauce.

Chicken thighs will provide juicier results than chicken breasts.

This dish pairs well with grilled vegetables, steamed broccoli, roasted potatoes, or a fresh salad.

You can also cook the chicken in a grill pan or skillet if an outdoor grill is unavailable.
