Ingredients
1 head cauliflower, cut into florets
3 large carrots, peeled and sliced into rounds
1 large sweet potato, cubed
1 can (15 oz) chickpeas, rinsed, drained and patted dry
3 tablespoons extra virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and black pepper to taste
1/2 cup plain Greek yogurt
3 tablespoons tahini
1 tablespoon lemon juice
1 clove garlic, minced
1-2 tablespoons water to thin sauce
Instructions
Preheat your oven to 400°F (200°C).
On a large sheet pan, toss the cauliflower, carrots, sweet potato, and chickpeas with olive oil, cumin, smoked paprika, salt, and pepper.
Spread the vegetables in a single layer and roast for 25-30 minutes, or until tender and golden brown, tossing halfway through.
While vegetables roast, whisk together the Greek yogurt, tahini, lemon juice, minced garlic, and water in a small bowl until smooth.
Divide the roasted vegetables and chickpeas into bowls.
Drizzle generously with the tahini yogurt sauce before serving.
Notes
