Description

Wholesome and comforting, these bowls feature tender grilled chicken, crisp broccoli, and a zesty, creamy garlic sauce that’s easy to make in under 30 minutes. A healthy and satisfying one-dish meal that’s simple and elegant.


Ingredients

1 lb boneless, skinless chicken breasts
1 head of broccoli, cut into florets
2 cups cooked brown rice or zucchini noodles
1/2 cup olive oil
4 garlic cloves, minced
1/2 cup grated Parmesan cheese or nutritional yeast
Juice of 1 lemon (about 3 tbsp)
Salt and pepper to taste
2 tbsp low-sodium soy sauce or tamari
1/2 tsp red pepper flakes (optional)
Fresh parsley or basil for garnish


Instructions

Preheat grill or grill pan to medium-high heat.
Season chicken breasts with salt, pepper, and 1 tbsp soy sauce. Grill for 5-6 minutes per side until cooked through. Let rest for 5 minutes, then slice.
In a saucepan, heat 1/4 cup olive oil over medium heat. Add minced garlic and sauté for 1 minute. Stir in Parmesan or nutritional yeast, lemon juice, remaining soy sauce, and red pepper flakes. Cook for 2-3 minutes until thickened to a creamy consistency.
While the sauce simmers, steam broccoli florets for 3-4 minutes until tender but still crisp. Season with salt and pepper.
To serve, divide brown rice or zucchini noodles into bowls. Top with grilled chicken slices and steamed broccoli. Pour the creamy garlic sauce over the top and garnish with fresh herbs.


Notes

For a gluten-free option, use tamari instead of soy sauce.
Nutritional yeast is a great dairy-free substitute for Parmesan in the sauce.
Use frozen broccoli if fresh is unavailable—just thaw and steam as directed.
The sauce can be made ahead and stored in the refrigerator for up to 3 days.
