Ingredients
4 (5 oz each) boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 cloves minced garlic
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
1 tablespoon honey (optional for glaze)
Instructions
Pat chicken dry and season with salt and pepper.
Whisk together olive oil, lemon juice, garlic, oregano, and thyme to make marinade.
Marinate chicken for 30 minutes or longer, flipping halfway.
Preheat grill to high heat.
Grill chicken 6-7 minutes per side until golden and juices run clear.
Optionally brush with honey during last 2 minutes for a glaze.
Notes
Marination can be extended up to 24 hours for deeper flavor.
Use a meat thermometer: cook to 165°F (74°C) internal temperature.
Serve with grilled vegetables, quinoa, or lemon-herb rice.
