Ingredients

1 head Romaine lettuce, chopped
1 cup cherry tomatoes, halved
2/3 cup mild pepperoncinis, sliced
1/2 cup pitted black olives, sliced
1/2 cup red onion, thinly sliced
1/2 cup Parmesan cheese, shredded
1 cup toasted croutons
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
2 tablespoons fresh lemon juice
2 tablespoons light mayonnaise
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and black pepper to taste


Instructions

In a large mixing bowl, combine the chopped Romaine, tomatoes, pepperoncinis, black olives, and red onion.
In a separate small jar or bowl, whisk together the olive oil, apple cider vinegar, lemon juice, light mayonnaise, garlic powder, and dried oregano until emulsified.
Season the dressing with salt and pepper to taste.
Pour the dressing over the salad base and toss well to coat all ingredients evenly.
Just before serving, fold in the shredded Parmesan cheese and toasted croutons to maintain their texture.

Notes
