Description

A nourishing, dairy-free take on the classic Tuscan soup, this recipe swaps heavy cream and processed meats for lean ground turkey sausage, nutrient-dense kale, and creamy coconut milk. This hearty, one-pot meal is naturally gluten-free and paleo-friendly, offering deep, savory flavors while remaining light enough to keep you energized. Perfect for busy weeknights or healthy meal prep, this wholesome soup delivers comfort in every bowl without the heaviness of traditional versions.

Ingredients

1 tbsp olive oil
1 lb ground Italian turkey or poultry sausage, casings removed
1 medium onion, chopped
6 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
4 cups chicken bone broth
3 large russet potatoes, thinly sliced
1 bunch curly kale, stemmed and torn
1 cup full-fat canned coconut milk
Salt and black pepper to taste

Instructions

Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground turkey sausage and cook until browned, breaking it up with a spoon.
Add the onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, dried basil, oregano, and thyme, cooking for 1 minute until fragrant.
Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Stir in the coconut milk and kale. Cook for 2-3 minutes until the kale is wilted and vibrant.
Season with salt and pepper to taste before serving.

Notes

Store in an airtight container in the refrigerator for up to 4 days. The flavors improve the next day as the potatoes absorb the broth. This soup is completely dairy-free, gluten-free, and Whole30 compliant.
