Description

A vibrant summer salad combining juicy watermelon, tangy feta, succulent blueberries, and herbal brightness. Simple, refreshing, and packed with electrolytes and protein. Perfect as a light side or flavor-boosted snack.


Ingredients

7-8 cups seedless watermelon – cut into ¾ inch cubes
1 ½ cups fresh blueberries – plus more to taste
1 cup crumbled feta cheese – plus more to taste
Fresh mint and basil leaves – thinly sliced
Juice from 1 ½ limes
1 tbsp extra virgin olive oil
1-2 tbsp honey
Pinch of salt


Instructions

Preheat oven to 350°F (180°C)
Cut watermelon into ¾ inch cubes using a mandoline (if available)
Thinly slice fresh mint and basil leaves
In a small bowl, whisk lime juice, olive oil, honey, and salt to form dressing
In a large mixing bowl, combine watermelon cubes, blueberries, crumbled feta, and herbs
Drizzle dressing over the salad and gently toss to coat evenly
Transfer to serving dish and add extra feta or herbs for garnish (optional)
Serve chilled as a refreshing side or appetizer
