Description

Tender honey BBQ chicken glaze paired with golden, creamy garlic Parmesan potatoes. A comforting, balanced weeknight meal with sweet, savory, and cheesy flavors that satisfy every craving.


Ingredients

4 boneless, skinless chicken breasts
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1 cup honey BBQ sauce (no alcohol-based ingredients)
2 cups baby potatoes, halved
4 garlic cloves, minced
1 1/2 cups milk
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
Salt and black pepper to taste
2 tablespoons unsalted butter
1 teaspoon olive oil


Instructions

Preheat oven to 400°F (200°C)
In a shallow dish, combine flour, paprika, garlic powder, thyme, salt, and pepper. Dredge chicken breasts in the mixture, pressing to coat evenly.
Arrange chicken in a single layer in a greased baking dish. Spoon half of the honey BBQ sauce over the chicken and set aside.
In another bowl, mix milk, Parmesan, garlic, basil, butter, olive oil, and remaining salt/pepper. Toss in the halved potatoes until well coated.
Spread potatoes around the chicken and pour the remaining BBQ sauce over the chicken and potatoes. Bake for 25-30 minutes, until chicken is fully cooked and potatoes are golden and tender.


Notes

To ensure the recipe is halal, use a honey BBQ sauce without alcohol or animal-based enzymes. For a vegan option, substitute chicken with mushrooms or cauliflower.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
