Description

Tender chicken glazed with smoky chipotle and tangy honey, served over vibrant rice, black beans, corn, and avocado. A Tex-Mex comfort dish with bold, balanced flavors.


Ingredients

2 boneless, skinless chicken breasts (6 oz total)
2 tbsp honey
1 chipotle pepper in adobo sauce (plus 1 tsp adobo paste)
1 lime (juiced and zested)
1 cup long-grain rice (or cauliflower rice)
1/2 cup cooked black beans
1/2 cup frozen corn (thawed)
1/2 avocado (sliced)
2 tbsp olive oil
1/4 cup red onion (diced)
1 tbsp chopped fresh cilantro
Salt and pepper to taste


Instructions

Pat chicken dry and season with salt and pepper.
Whisk honey, chipotle, adobo paste, lime juice/zest, and 1 tbsp oil to make glaze.
Heat remaining oil in a skillet over medium-high. Cook chicken 5-6 minutes per side until browned.
Brush glaze onto chicken during last 2 minutes of cooking.
Meanwhile, cook rice according to package instructions. Toss with beans, corn, and a drizzle of lime juice.
Assemble bowls: rice base + chicken + avocado, red onion, and cilantro. Garnish with additional lime.


Notes

Use canned chipotle peppers for convenience
Substitute chipotles without adobo in separate sauce
For halal: ensure chicken is halal-certified
Make gluten-free: use certified gluten-free rice
Store leftovers in air-tight containers for 3-4 days
