Ingredients
1 lb boneless skinless chicken breasts (pounded to ¼-inch thickness)
¼ cup honey
2 tablespoons fresh lime juice
1 teaspoon lime zest
2 cloves garlic, minced

Avocado oil (or light olive oil)
1 cup cooked rice (white or brown)
¼ cup fresh coriander, chopped
2 ripe avocados, sliced
1 tablespoon lime juice (to prevent browning)

Instructions
Pound chicken breasts to ¼-inch thickness and season with salt and pepper
Whisk together honey, lime juice, lime zest, and garlic in a small bowl
