Description

A vibrant, tropical-inspired dish featuring tender honey-lime glazed chicken topped with fresh mango salsa. Perfect for bringing a burst of sunshine to your meal with its sweet, tangy, and savory flavors.

Ingredients

4 boneless chicken breasts
3 tablespoons honey
Juice of 2 fresh limes
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 ripe mangoes, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced (optional)
1 tablespoon lime juice (for salsa)

Instructions

Preheat oven to 400°F (200°C) or set up a grill.
In a bowl, mix honey, lime juice, garlic, ginger, salt, pepper, cumin, and coriander.
Marinate chicken in the glaze for 15 minutes.
Bake for 20-25 minutes or grill for 8-10 minutes per side until cooked through.
While chicken cooks, combine diced mango, red onion, cilantro, jalapeño, and lime juice in a small bowl.
Let salsa rest for 10 minutes before serving over warm chicken.

Notes

Chicken can be sautéed or pan-seared for a non-oven method.
For extra flavor, add a squeeze of fresh lime zest to the salsa.
Store leftover chicken in an airtight container for up to 3 days.
Serving the salsa on top preserves the freshest texture.
Use a sharp knife for clean mango cubes.
