Ingredients
4 tablespoons lime juice
2 tablespoons honey
1 tablespoon soy sauce (or tamari for gluten-free)
7 boneless, skinless chicken thighs
1 teaspoon ground ginger (optional)
1 clove garlic, minced (optional)
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat a large skillet over medium-high heat with olive oil
Pat chicken dry and season with salt and pepper
Sear thighs 4-5 minutes per side until golden
Push chicken to the edges; add lime juice, honey, soy sauce, ginger, and garlic to the center
Simmer 8-10 minutes, spooning glaze over chicken
Reduce heat to low and caramelize 3-5 minutes until sauce thickens
Notes
Use fresh lime juice for maximum brightness
Add a pinch of chili flakes for heat
