A vibrant, protein-rich salad combining tender grilled chicken with crisp greens, tangy honey mustard dressing, and fresh avocado. Balanced, refreshing, and perfect for any occasion.
Ingredients
4 boneless, skinless chicken breasts
1 cup honey
1/2 cup Dijon mustard
1 tbsp apple cider vinegar
2 cups chopped romaine lettuce
1 cup halved cherry tomatoes
1 avocado, sliced
1/4 cup chopped red onion
1 tbsp olive oil
Salt and black pepper to taste
Optional: fresh cilantro or parsley for garnish
Instructions
Preheat grill or skillet to high heat
Toss chicken breasts with half the honey, 2 tbsp mustard, 1 tsp vinegar, and 1 tsp salt
Grill or pan-sear chicken for 6-8 minutes per side until cooked through
In a bowl, mix remaining honey, mustard, vinegar, and 1 tsp salt for the salad dressing
In a large salad bowl, combine romaine, cherry tomatoes, avocado, red onion, and remaining mustard mixture
Drizzle with remaining dressing and toss gently
Top with cooked chicken and optional garnishes
Notes
For a smoky flavor, use smoked paprika instead of regular mustard
Chill leftovers in an airtight container for up to 2 days
Add croutons or shredded carrots for extra crunch
