Description

A sweet and spicy fusion dish combining crispy honey-glazed chicken with warm rice or quinoa and colorful vegetables. The sticky-hot sauce, infused with smoked paprika and cayenne, ties the hearty base and fresh toppings together for a balanced, restaurant-quality weeknight meal.


Ingredients

4 boneless, skinless chicken breasts
1 cup honey
1/4 cup apple cider vinegar
1 tbsp smoked paprika
1 tsp cayenne pepper
1 tsp garlic powder
1/2 cup olive oil (for frying)
2 cups cooked rice or quinoa
2 cups mixed vegetables (e.g., bell peppers, broccoli, zucchini)
Salt and pepper to taste
Optional toppings: avocado slices, pickled onions, sesame seeds


Instructions

Preheat oven to 375°F (190°C) if using as baking method.
In a bowl, mix honey, vinegar, smoked paprika, cayenne, and garlic powder to create the glaze.
Season chicken breasts with salt and pepper.
Heat olive oil in a skillet or air fryer. Cook chicken until golden and glazed, then finish in oven if needed.
Simultaneously, steam or sauté vegetables until tender.

Notes

For an air fryer, cook chicken at 375°F for 15-20 minutes, turning halfway.
Substitute rice with cauliflower rice for a low-carb option.
