Ingredients

1 lb lean ground turkey
1 tbsp Italian seasoning
1 onion, diced
2 bell peppers, chopped
2 cans (15 oz) cannellini beans, rinsed and drained
1 jar (24 oz) pizza sauce
4 cups beef broth
1 tsp garlic powder
Salt and black pepper to taste
Optional: Shredded mozzarella or parmesan for topping
Optional: Croutons for serving


Instructions

In a skillet, brown the ground turkey over medium-high heat until fully cooked then drain any excess fat.
Place the cooked turkey into the slow cooker.
Add the diced onion, chopped bell peppers, cannellini beans, pizza sauce, beef broth, garlic powder, and Italian seasoning to the slow cooker.
Stir all ingredients until well combined.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Adjust seasoning with salt and pepper before serving.
Top each bowl with a sprinkle of cheese and croutons if desired.


Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. This soup freezes well for future meals. You can swap beef broth for vegetable broth to keep it lighter.
