Description
Crispy Cajun-seasoned fries loaded with creamy cheddar cheese sauce, zesty voodoo sauce, and flavorful toppings for a bold Louisiana-style snack or appetizer.
Ingredients
- 500 g frozen or fresh-cut fries (thick-cut or crinkle-cut preferred)
- 2 tbsp olive oil (if baking fresh fries)
- 1 tbsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- Pinch of salt (if Cajun seasoning is low-sodium)
- 1 tbsp butter or plant-based butter
- 1 tbsp all-purpose flour
- 200 ml milk (dairy or plant-based)
- 100 g shredded cheddar cheese
- 1/4 tsp Cajun seasoning
- Pinch of salt and black pepper
- 4 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp Dijon mustard
- 1 tsp hot sauce
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp vinegar or lemon juice
- 1 tsp sugar or honey
- Sliced jalapenos (optional)
- Diced red onions (optional)
- Chopped scallions (optional)
- Fresh chopped parsley or coriander (optional)
- Crumbled cheese or dairy-free cheese (optional)
- Sliced olives (optional)
- Optional toppings: sautéed mushrooms, grilled chicken, or spiced chickpeas
Instructions
1. If using fresh potatoes, cut them into thick fries and soak in cold water for 30 minutes. Drain, pat dry, and toss with olive oil, Cajun seasoning, garlic powder, paprika, black pepper, and salt.
2. Bake the fries at 220°C (425°F) for 25–30 minutes or air fry until golden and crispy. If using frozen fries, cook according to package directions and toss with Cajun seasoning after baking.
3. In a saucepan over medium heat melt the butter and whisk in the flour to make a roux. Cook for 1–2 minutes.
4. Slowly whisk in the milk and continue stirring until the sauce thickens.
5. Add the shredded cheddar cheese, Cajun seasoning, salt, and pepper. Stir until melted and creamy, then set aside.
6. In a bowl whisk together mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, smoked paprika, vinegar, and sugar until smooth to make the voodoo sauce.
7. Place the hot fries on a serving tray or plate.
8. Drizzle generously with the cheese sauce.
9. Add toppings like jalapenos, onions, scallions, and herbs.
10. Finish with a drizzle of voodoo sauce and serve immediately while the fries are crispy.
Notes
Thick-cut or crinkle-cut fries hold the sauces best for this recipe.
Adjust the hot sauce in the voodoo sauce depending on your preferred spice level.
These fries can be customized with toppings like grilled chicken, sautéed mushrooms, or spiced chickpeas.
Serve immediately after assembling to keep the fries crispy.
