Description

Ingredients

2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 lb carrots, peeled and chopped
1 inch fresh ginger, peeled and grated
4 cups vegetable broth
Salt, to taste
Black pepper, to taste
Optional garnishes: fresh parsley, a swirl of coconut milk


Instructions

Heat olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and sauté until softened, about 5-7 minutes.
Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
Add the chopped carrots and vegetable broth to the pot.
Bring the soup to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the carrots are very tender.
Carefully transfer the soup to a blender (or use an immersion blender directly in the pot) and blend until smooth and creamy.
Season with salt and black pepper to taste.
Ladle into bowls and serve hot, garnished with fresh parsley or a swirl of coconut milk if desired.

For a smoother soup, ensure carrots are cooked until very tender.
Adjust the amount of ginger to your preference for spiciness.
This soup can be made ahead and reheated. It also freezes well.
