Ingredients
1 lb ground beef (90% lean, for a lighter version)
3 tbsp butter or olive oil (prefer cast iron for crispiness)
1 medium onion, diced (sweet Vidalias recommend)
3 cloves garlic, minced (or 1 tsp garlic powder + ½ tsp onion powder)
4 medium russet potatoes, diced into 2½” cubes
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika (optional)
¼ cup heavy cream or whole milk
1 cup cheddar cheese (shredded, sharp for bold flavor)
2 tbsp fresh parsley or green onions, chopped
Instructions
Preheat oven to 400°F
Heat skillet over medium-high heat and add butter/oil
Drain excess moisture from beef; brown in batches, avoiding overcrowding
Add diced onion and garlic, sauté 3-4 minutes until softened
Sprinkle salt and paprika over the mix
Add cubed potatoes to fill the skillet
Spread evenly and cook 10-12 minutes until potatoes are golden
Pour heavy cream/milk into the pan
Top with shredded cheddar cheese
Transfer to oven and bake 15-20 minutes until cheese is crispy and golden
Garnish with fresh herbs before serving
Notes
Use an oven-safe cast-iron skillet for best results
Replace butter with olive oil for a lighter version
Substitute with lean ground beef or reduced-fat cheese if desired
