Description

A vibrant summer salad reimagining the classic Caprese with ripe peaches, tender mozzarella, and basil drizzled with balsamic glaze. Light, refreshing, and perfect for garden parties or picnics, this dish balances sweet, creamy, and herby notes for a harmonious flavor.

Ingredients

2 ripe peaches, sliced
8 oz fresh mozzarella, torn into chunks
1 cup fresh basil leaves
¼ cup balsamic glaze
Salt, to taste
Cracked black pepper, to taste
1 tbsp extra virgin olive oil (optional, for added richness)

Instructions

Slice peaches into even wedges and place in a large serving bowl.
Tear mozzarella into bite-sized pieces and add to the bowl with basil leaves.
Pour balsamic glaze over the salad, gently tossing to coat.
Season with salt and pepper. Drizzle olive oil if desired before serving.

Notes

Use stone fruits like nectarines as a peaches substitute.
Pair with grilled zucchini or chickpea salad for a balanced meal.
Store leftovers in the fridge for up to 2 days (balsamic glaze may cause slight softening).
