Ingredients
4 halal-smoked sausage links (sliced into rounds, fat trimmed)
3 cups peeled and diced Yukon Gold potatoes
1 small yellow onion (finely chopped)
2 cloves garlic (minced)
3 cups low-sodium chicken broth
1/2 cup whole milk
1/2 cup heavy cream
2 tablespoons unsalted butter (for roux)
2 tablespoons all-purpose flour
1/4 cup shredded sharp cheddar cheese
Salt and black pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Brown sausage slices in a large pot over medium heat until no longer pink; remove and set aside
Add butter and melt; stir in flour to form a smooth roux
Gradually whisk in chicken broth, ensuring no lumps form
Add onion, garlic, and potatoes
Simmer 20 minutes until potatoes are tender
Reduce heat, stir in cooked sausage and cheese

Return to pot
