Description
A hearty tomato-based soup with plant-based ‘Italian sausage’ and veggie pepperoni, topped with melted mozzarella. A comforting, no-dough pizza-inspired meal in a bowl.
Ingredients
1 tablespoon olive oil
1 pound plant-based Italian sausage substitute
2 cloves garlic, minced
2 cups tomato sauce
1 cup chicken stock
1 cup vegetarian pepperoni slices
2 cups shredded mozzarella cheese
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Heat olive oil in a large pot. Cook plant-based sausage until browned, breaking it up with a spoon
Add garlic and sauté 2 minutes
Stir in tomato sauce, chicken stock, oregano, basil, salt, and pepper. Simmer 15 minutes
Add pepperoni slices and simmer 5 more minutes
Garnish each bowl with shredded mozzarella cheese until melted
Notes
Use gluten-free bread croutons for added texture
Substitute almond milk for a dairy-free version by using vegan cheese
Store in airtight containers up to 3 days
Add spinach or kale if using chicken stock as liquid
