Description

Ingredients

1 lb boneless skinless chicken breasts (cut into 1-inch pieces)
1 1/2 tsp Kosher salt (divided)
1 tsp dried oregano
1/4 tsp freshly ground black pepper
2 Tbsp extra virgin olive oil
2 Tbsp unsalted butter
1 medium yellow onion (diced)
3 cloves garlic (minced)
1/2 cup sun-dried tomatoes (chopped)
4 cups chicken stock (low sodium)
16 oz potato gnocchi
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 Tbsp basil pesto (non-alcoholic)
2 cups fresh baby spinach


Instructions

Season the chicken pieces with 1/2 teaspoon salt, oregano, and black pepper.
Heat olive oil and butter in a large pot or Dutch oven over medium-high heat.
Add chicken to the pot and brown on all sides until golden, then remove and set aside.
In the same pot, add the diced onion and sauté until translucent, about 5 minutes.
Add the minced garlic and sun-dried tomatoes, cooking for another minute until fragrant.
Pour in the chicken stock, scraping the bottom of the pot to release any browned bits.
Bring the liquid to a simmer, then stir in the potato gnocchi and return the chicken to the pot.
Cook for 5-7 minutes, or until the gnocchi are tender and float to the surface.
Reduce heat to low and stir in the heavy cream, Parmesan cheese, and basil pesto until smooth.
Stir in the spinach until just wilted.
Season with the remaining salt to taste and serve immediately.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of chicken stock if the soup becomes too thick. Avoid freezing as the cream base may separate.
