Description

Elevate your seasonal dining with these stunning roasted acorn squash slices, perfectly caramelized and topped with a vibrant mixture of pomegranate arils, toasted pistachios, and aromatic chili crisp. This plant-based dish masterfully balances earthy sweetness with a sophisticated kick of heat and crunch, making it an ideal centerpiece for holiday gatherings or a wholesome, intentional weeknight meal. It is a beautiful celebration of simple, natural ingredients transformed into a modern, restaurant-quality side dish.

Ingredients

2 medium acorn squashes
2 tablespoons extra virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 cup pomegranate arils
1/3 cup pistachios, shelled and toasted
2 tablespoons alcohol-free chili crisp oil
Sea salt to taste
Fresh cilantro for garnish

Instructions

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Wash the acorn squashes thoroughly, cut them in half crosswise to remove seeds, then slice into 1/2-inch thick rings.
In a large bowl, toss the squash rings with olive oil, cumin, cinnamon, and a pinch of sea salt until evenly coated.
Arrange the squash rings in a single layer on the baking sheet.
Roast for 25 to 30 minutes, turning once halfway through, until the squash is fork-tender and the edges are golden brown.
Transfer the warm roasted slices to a serving platter.
Top immediately with the pomegranate arils, toasted pistachios, and a generous drizzle of chili crisp.
Garnish with fresh cilantro before serving.

Notes

Ensure you use an alcohol-free chili crisp; most standard store-bought chili crisps are vegetable-oil based and naturally alcohol-free. For extra depth, you can roast the squash with a touch of maple syrup if you prefer a sweeter profile. Leftovers can be stored in an airtight container for up to 3 days, though the crunch factor is best enjoyed fresh.
