Ingredients
2 large acorn squash
1/2 pound ground Italian-style turkey or chicken sausage (pork-free)
1 tablespoon olive oil
1/2 large onion, diced
3 cups fresh kale, chopped
1 tablespoon fresh garlic, minced
2 stalks celery, sliced
1/2 large apple, diced
1/2 teaspoon fresh thyme
2 fresh sage leaves, minced
1 teaspoon fresh rosemary, minced
1 teaspoon sea salt
1/2 teaspoon black pepper
2 tablespoons raw walnuts, chopped
Instructions
Preheat your oven to 400°F (200°C).
Cut the acorn squash in half lengthwise and remove the seeds.
Brush squash with a little oil, place cut-side down on a baking sheet, and roast for 30-40 minutes until tender.
While roasting, heat olive oil in a skillet over medium heat.
Add onion, celery, and sausage to the skillet, cooking until the meat is browned and vegetables are soft.
Stir in the kale, garlic, apples, and herbs, cooking until the kale is wilted.
Season the mixture with salt and pepper.
Flip the roasted squash over and scoop the sausage mixture into the cavities.
Bake for an additional 10 minutes to allow flavors to meld, then garnish with toasted walnuts.
