Ingredients

1 pound Italian ground turkey or chicken sausage (pork-free)
1 yellow onion, finely diced
2 cloves garlic, minced
1 quart low-sodium chicken stock
14 ounces crushed tomatoes
2 tablespoons tomato paste
1 teaspoon sea salt
9 ounces cheese-filled tortellini
2 cups fresh baby spinach
1/2 cup heavy cream
Fresh parsley for garnish


Instructions

Brown the ground turkey or chicken sausage in a large pot over medium-high heat until fully cooked.
Add the diced onion to the pot and sauté until translucent and aromatic.
Stir in the minced garlic and cook for another minute until fragrant.
Add the tomato paste, crushed tomatoes, and chicken stock to the pot, stirring well to combine.
Bring the liquid to a gentle simmer, then stir in the sea salt.
Add the cheese tortellini to the soup and cook according to the package directions, usually around 5-7 minutes.
