Description
Shrimp Taco Bowls are a healthy and easy dinner or lunch made with seasoned shrimp, black beans, rice, avocado, and a creamy Greek Yogurt Chipotle Lime Sauce.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 tbsp taco seasoning
- 1/2 tbsp olive oil
- 4 cups cilantro lime brown rice
- 1 can black beans, rinsed and drained
- 1 cup grape tomatoes, halved
- 1/2 red onion, sliced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 lime
- 1/2 cup plain Greek yogurt
- 1/2 lime, juiced
- 1/2 tsp adobo sauce from chipotle peppers in adobo sauce
Instructions
1. Preheat the oven to 425 degrees F.
2. Spray a baking sheet with cooking spray or line it with foil for easy cleanup.
3. In a medium bowl, toss the shrimp with taco seasoning and olive oil until evenly coated.
4. Arrange the shrimp in a single layer on the baking sheet.
5. Bake for 3-5 minutes until the shrimp turn pink and begin to curl.
6. In a small bowl, combine the Greek yogurt, lime juice, and adobo sauce. Adjust spice level to taste.
7. Divide the cilantro lime brown rice among four bowls.
8. Top each bowl with shrimp, black beans, grape tomatoes, red onion, and avocado.
9. Sprinkle with chopped cilantro and squeeze fresh lime juice over the bowls.
10. Drizzle the Greek Yogurt Chipotle Sauce on top and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days.
These bowls are perfect for meal prep and can be assembled ahead of time.
Adjust the amount of chipotle adobo sauce based on your spice preference.
