Ingredients
6-8 large ripe tomatoes (cherry tomatoes can be used)
8 oz fresh mozzarella cheese, cut into bite-sized cubes
1/4 cup extra virgin olive oil
1 tbsp balsamic vinegar
10-12 fresh basil leaves, torn
Salt and black pepper (to taste)
Instructions
Wash and pat dry the tomatoes and mozzarella
Tear basil leaves into small pieces
Whisk olive oil, balsamic vinegar, salt, and pepper for the dressing
Place tomatoes and mozzarella in a serving bowl
Add torn basil
Drizzle dressing over the salad
Garnish with additional basil before serving
