Ingredients
1.5 lbs sweet potatoes, peeled and cut into 1/2-inch cubes
2 tablespoons avocado oil
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon fine sea salt
1/8 teaspoon black pepper
1 lb lean ground beef or turkey
1 small onion, finely diced
1 bell pepper, finely diced
1 cup tomato sauce
2 tablespoons tomato paste
1 tablespoon apple cider vinegar
2 tablespoons coconut aminos
Instructions
Preheat your oven to 400°F (200°C).
Toss the sweet potato cubes with avocado oil, garlic powder, paprika, salt, and pepper on a large sheet pan.
Roast for 25-30 minutes, tossing halfway, until tender and lightly browned.
While potatoes roast, heat a large skillet over medium-high heat.
Add the ground meat, onion, and bell pepper; cook until meat is browned and vegetables are softened.
Stir in the tomato sauce, tomato paste, apple cider vinegar, and coconut aminos.
Simmer the mixture for 10 minutes until the sauce thickens and flavors meld.
Serve the meat mixture spooned over generous portions of the roasted sweet potatoes.
Notes
Store leftovers in an airtight container for up to 4 days; the flavor often improves after sitting in the refrigerator. You can increase the protein content by adding extra meat or serving with a side of steamed greens.
