Description

A comforting, one-pot meal featuring tender chicken thighs and crispy potatoes in a rich garlic-Parmesan sauce. Perfect for busy weeknights, this dish delivers bold flavor with minimal effort, filling your home with a savory, inviting aroma.

Ingredients

4 large garlic cloves, minced
2 lbs bone-in chicken thighs, skin removed
1.5 lbs baby red potatoes, halved
1 cup grated Parmesan cheese
1 tbsp olive oil
1 tsp Italian seasoning
1 tsp Dijon mustard
Salt and pepper to taste

Instructions

Pat chicken dry and season with salt, pepper, garlic, and Italian seasoning
Heat olive oil in a skillet and sear chicken for 2-3 minutes per side to brown
Transfer chicken to slow cooker, add potatoes, Dijon mustard, and half the Parmesan cheese
Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and potatoes are done
Before serving, sprinkle remaining Parmesan cheese on top

Notes

For halal assurance, use Parmesan cheese made without animal enzymes. Boneless thighs work but take slightly less time to cook. Serve with optional lemon wedges or crusty bread.
