Ingredients

1.5 lbs chicken breasts, boneless and skinless
1 (15 ounce) can light coconut milk
1 (15 ounce) can pumpkin puree (not pie filling)
1.5 cups low-sodium chicken broth
0.5 cup natural creamy peanut butter
1 tablespoon fresh ginger, grated
3 cloves garlic, minced
0.5 teaspoon cayenne pepper
1 teaspoon salt
0.5 teaspoon black pepper
Fresh cilantro for garnish


Instructions

Place the chicken breasts into the bottom of the slow cooker.
In a medium bowl, whisk together the coconut milk, pumpkin puree, chicken broth, peanut butter, ginger, garlic, cayenne pepper, salt, and black pepper until smooth.
Pour the mixture over the chicken in the slow cooker.
Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is cooked through and tender.
Remove the chicken breasts, shred with two forks, and return the meat to the slow cooker.
Stir well to combine and serve warm, garnished with fresh cilantro.


Notes

Ensure you use pure pumpkin puree, not pumpkin pie filling which contains added sugars and spices. For an even creamier texture, you can use full-fat coconut milk instead of light. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth if the soup has thickened too much.
