Description

This comforting autumn meal features tender roasted acorn squash filled with a savory blend of halal-certified Italian chicken sausage, tart diced apples, celery, and aromatic herbs. The combination of sweet squash, savory meat, and crisp fruit creates a balanced, nourishing dish that is as elegant as it is wholesome. Perfect for a cozy weeknight dinner or a special seasonal gathering, this recipe is simple to prepare yet deeply flavorful.


Ingredients

3 acorn squash, halved and seeds removed
6 tablespoons olive oil, divided
1 pound mild Italian chicken sausage, casings removed
1 small yellow onion, finely diced
1 tart apple, peeled, cored, and diced
4 cloves garlic, minced
3 ribs celery, diced
1 tablespoon fresh sage, chopped
1 teaspoon fresh thyme, chopped
0.5 cup panko breadcrumbs
0.25 cup grated parmesan cheese
Salt and black pepper to taste


Instructions

Preheat your oven to 400°F (200°C).
Brush the cut sides of the acorn squash with 2 tablespoons of olive oil and season with salt and pepper.
Place the squash cut-side down on a baking sheet and roast for 30-35 minutes until tender.
While the squash roasts, heat the remaining olive oil in a large skillet over medium heat.
Add the chicken sausage and cook until browned, breaking it into small crumbles.
Stir in the onion, celery, and apple, cooking until softened.
Add the garlic, sage, and thyme, cooking for 1-2 minutes until fragrant.
Flip the roasted squash over and divide the sausage mixture among the cavities.
Top each stuffed squash with a sprinkle of panko breadcrumbs and parmesan cheese.
Return to the oven for 10-12 minutes until the topping is golden and crisp.


Notes

Ensure the chicken sausage is marked as halal or uses no alcohol-based casings. You can substitute the panko with gluten-free breadcrumbs if needed. Store leftovers in an airtight container for up to 3 days.
