Ingredients
2 lbs golden potatoes, diced
3 cups low-sodium chicken or vegetable broth
2 large carrots, finely diced
1 rib celery, diced
1/2 medium onion, diced
2 teaspoons salt
1 teaspoon minced garlic
1 teaspoon dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup milk
Instructions
Place the diced potatoes, carrots, celery, and onion into the crockpot.
Add the chicken broth, garlic, salt, parsley, thyme, and black pepper.
Stir to combine, cover, and cook on low for 6 to 8 hours or high for 3 to 4 hours until vegetables are tender.
In a microwave-safe bowl, melt the butter and whisk in the flour to create a paste.
Gradually whisk in the milk to the butter-flour mixture and heat in the microwave for 1-2 minutes until thickened.
Pour the thickened mixture into the crockpot and stir well to achieve a creamy consistency.
