Description
A deeply nourishing and gut-friendly take on the classic French onion soup. This recipe focuses on slow-caramelized yellow onions, a rich and protein-dense beef bone broth, and aromatic thyme to create a satisfying, savory foundation. Perfect as a comforting weeknight main course, this version swaps alcohol and unnecessary fats for wholesome, clean ingredients, topped with golden, melted Gruyere cheese and toasted baguette slices.
Ingredients
2 tablespoons unsalted butter
1 tablespoon olive oil
4 large yellow onions, thinly sliced
4 cloves garlic, minced
3 tablespoons all-purpose or gluten-free flour
2 cups beef bone broth
4 cups beef broth
1 tablespoon Worcestershire sauce (ensure alcohol/anchovy-free if required)
3 sprigs fresh thyme or 1 teaspoon dried
1 bay leaf
Salt and freshly cracked black pepper to taste
French baguette, sliced into 1-inch pieces
Freshly shredded Gruyere cheese
Instructions
Heat butter and olive oil in a large pot over medium heat.
Add the sliced onions and cook slowly, stirring occasionally, until deeply golden brown and caramelized, about 30 to 45 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the onions and cook for 2 minutes to toast the flour.
Slowly stir in the beef bone broth and beef broth, ensuring no lumps remain.
Add the Worcestershire sauce, thyme sprigs, and bay leaf.
Bring to a simmer, then reduce heat and cover, letting it cook for 20 minutes to develop flavors.
Season with salt and pepper to taste, and remove the bay leaf and thyme stems.
To serve, toast baguette slices, ladle soup into heat-safe bowls, top with bread and a generous handful of Gruyere cheese.
Broil the bowls until the cheese is bubbly and golden brown.
Notes
Ensure your Worcestershire sauce is free from alcohol. For a gluten-free option, use a 1:1 gluten-free flour blend and gluten-free bread. The caramelization step is crucial for flavor, so do not rush it.
