Description

Ingredients

3 lbs ripe tomatoes, chopped
1/2 cup extra virgin olive oil
1 medium onion, diced
3 cloves garlic, minced
1 tsp sugar
1 cup vegetable broth
1 cup low-fat feta cheese, crumbled
1/4 cup plain Greek yogurt (optional for extra creaminess)
1 sprig fresh basil, chopped
dried oregano
dried thyme
salt to taste


Instructions

Heat olive oil in a large pot over medium heat

Add chopped tomatoes, sugar, and vegetable broth
