Description

A nourishing and rustic bowl of comfort, this Tuscan-inspired soup brings together savory halal chicken or beef sausage with creamy white beans and vibrant, healthy kale. Perfect for chilly evenings, this hearty one-pot meal is simple to prepare, packed with fiber and protein, and provides a deeply satisfying, restorative dining experience for the whole family.


Ingredients

1 pound Italian chicken or beef sausage (casing removed)
1 tablespoon olive oil
1 medium yellow onion, finely chopped
1 large russet potato, peeled and cut into small half-inch cubes
7.5 ounces sun-dried tomatoes, drained and chopped
3 cloves garlic, minced
0.5 teaspoon Italian seasoning
6 cups low-sodium chicken or vegetable broth
1 can (15 ounces) white beans (cannellini or Great Northern), rinsed and drained
4 ounces fresh baby kale
0.5 cup heavy cream (or full-fat coconut milk)
0.5 teaspoon kosher salt
Freshly cracked black pepper to taste
Freshly grated parmesan cheese for serving


Instructions

Remove the casing from the sausage and heat a large pot over medium-high heat.
Add the sausage and cook, breaking it into small crumbles, until browned and cooked through; remove with a slotted spoon and set aside.
In the same pot, heat the olive oil and add the onion, sautéing until soft and translucent.
Add the minced garlic and potato cubes, cooking for 2-3 minutes until fragrant.
Stir in the sun-dried tomatoes, Italian seasoning, salt, and black pepper.
Pour in the broth and bring the mixture to a gentle boil, then simmer for about 10-12 minutes until the potatoes are tender.
Add the cooked sausage and the rinsed white beans into the pot and simmer for another 5 minutes.
Stir in the fresh baby kale and the cream, cooking just until the kale is wilted.
Serve hot, topped with freshly grated parmesan cheese.
