Description
A protein-rich, refreshing salad blending creamy tzatziki with tender chicken, crisp romaine, and tangy Mediterranean extras. Light, versatile, and ideal for warm-weather meals.
Ingredients
1 cup plus 2 Tbsp plain Greek yogurt
½ cup grated cucumber (seed removed)
2–3 garlic cloves, minced
2 Tbsp extra virgin olive oil
2 Tbsp finely chopped fresh dill
Pinch of salt and freshly ground black pepper
2 cups cooked chicken (white or dark meat, chopped)
2 cups chopped romaine lettuce
1 cup halved grape tomatoes or cherry tomatoes
½ cup sliced pepperoncini peppers
½ cup sliced Kalamata olives
¼ cup chopped red onion
Instructions
In a bowl, combine Greek yogurt, grated cucumber, garlic, dill, salt, and pepper to make tzatziki sauce
Set aside â…“ cup of tzatziki for drizzling
Mix remaining tzatziki with chicken, romaine, tomatoes, pepperoncini, olives, and red onion in a large bowl
Chill for 10 minutes before serving
Serve with reserved tzatziki on top or as a side
Notes
For vegetarian version, omit chicken and add chickpeas or tofu
Swapping romaine for kale adds extra heartiness
Chill ingredients separately if serving immediately
